Garlic Butter Pork Chops with Cheesy Potato Bake

Make the Garlic Butter: In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the minced garlic and thyme, cooking until fragrant. Return the seared pork chops to the skillet and generously spoon the garlic butter over them.
Combine and Bake: After 30 minutes, remove the foil from the potatoes. Place the browned pork chops on top of the potatoes, then pour the garlic butter sauce over both the pork and potatoes. Return the dish to the oven and bake, uncovered, for an additional 30 minutes, or until the potatoes are tender and the pork chops are cooked through.
Serve: Allow the dish to rest for 5-10 minutes before serving. Garnish with freshly chopped parsley if desired.
