Prepare the Potatoes: Peel and grate the potatoes. Squeeze out the excess moisture using a clean kitchen towel or a sieve. Season the grated potatoes with salt and mix well.
Form and Fry Patties: Heat the oil in a frying pan over medium heat. Take small portions of the grated potatoes, form them into patties, and coat them lightly with starch. Fry the potato patties in the hot oil until they are golden brown and crispy on both sides. Drain them on paper towels to remove excess oil.
Yogurt Mint Sauce: For the sauce, mix yogurt with finely chopped mint, a pinch of salt, and chili peppers (if using) in a bowl.
Serve: Serve the crispy potato fritters with the yogurt mint sauce on the side. Sprinkle some oregano on top for an added touch of flavor.
