Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a baking dish for the scalloped potatoes.
Prepare the Cheesy Scalloped Potatoes:
In a large bowl, combine the heavy cream, minced garlic, salt, black pepper, and thyme. Layer half of the sliced potatoes in the greased baking dish. Pour half of the cream mixture over the potatoes and sprinkle with half of the cheddar and mozzarella cheeses. Repeat with the remaining potatoes, cream mixture, and cheeses.
Bake the Potatoes:
Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden and bubbly.
Prepare the Pork Chops:
While the potatoes are baking, heat olive oil in a skillet over medium-high heat. Season the pork chops with minced garlic, Parmesan cheese, Italian seasoning, salt, and black pepper.
