Instructions :
Preheat the oven to 180°C.
Peel and cut the squash into small cubes. Cook in a pan with the chopped onion and olive oil until the squash is tender.
Add the honey and cinnamon to the vegetables and allow to caramelize slightly.
Mix the goat cheese and ricotta in a bowl, add salt and pepper.
In a gratin dish, start with a layer of squash, then lasagna sheets, a layer of goat cheese and ricotta, and repeat.
Finish with a layer of grated mozzarella.
Bake for 30 minutes until the cheese is golden and the lasagna is cooked.
Serve hot, with a touch of honey if desired.
