Preheat your oven to 200°C (392°F).
In a baking dish, arrange a layer of sliced potatoes, then a layer of the minced meat mixture. Repeat the layers, finishing with a layer of potatoes.
Top the final layer of potatoes with the steamed vegetables.
Cover the baking dish with foil and bake for 40-50 minutes, or until the potatoes are cooked through. Remove the foil towards the end of cooking if necessary to brown the top.
Garnish with chopped parsley before serving.
