Preparation :
Cooking the omelette:
Beat the eggs with a pinch of salt and pepper. Heat the butter in a pan, then pour in the eggs and cook over low heat.
Assembling the sandwich:
Spread the pesto on a slice of bread, place the raw ham and mozzarella on the omelette still in the pan. Place the slice of pesto bread on top.
Fold and grill:
Fold the edges of the omelette over the bread to form a sandwich. Flip and grill until the bread is golden and crispy.
Service :
Serve with a green salad for a touch of freshness.
