Preparation of the butter: Start by melting the butter in a saucepan over low heat, then let it cool.
Beat the eggs and sugar: In a large bowl, beat the eggs and sugar until light and fluffy.
Add the other ingredients: Gently fold in the sifted flour, baking powder, salt and vanilla essence. Mix with a spatula until the mixture is smooth.
Add the butter: Add the melted butter (which must be lukewarm) and mix well. If you want a more aromatic touch, you can add the honey at this point.
Fill the molds: Butter and lightly flour a madeleine mold (if it is not silicone). Pour the mixture into the molds, filling them about 3/4 of their capacity.
Bake the madeleines: Preheat the oven to 180°C and bake the madeleines for about 10-12 minutes, or until they are golden and puffed up. To test if they are cooked, insert a toothpick into the center of a madeleine: if it comes out clean, they are ready.
Cool and serve: Let the madeleines cool for a few minutes in the pan, then transfer to a wire rack. If desired, dust with icing sugar before serving.
Serving and storage tips:
Madeleines are ideal served with a cup of tea, coffee or hot chocolate. You can also enjoy them plain, or fill them with custard or jam for an extra touch. To store your madeleines, store them in an airtight container at room temperature for up to 3-4 days. If you prefer, you can freeze them for later: simply place them in a food bag and thaw at room temperature when desired.
