Cook the potatoes in a large pan of salted water for about 15 minutes, until tender. Drain and mash until smooth.
Meanwhile, heat a frying pan with a tablespoon of butter and fry the chopped onion and garlic until translucent.
Add the fish fillets to the pan and cook for 5-7 minutes, until cooked through. Flake the fish with a fork.
Mix the mashed potatoes, flaked fish, mustard, parsley, egg, salt and pepper in a large bowl.
Shape the mixture into small balls and roll in the flour, then the breadcrumbs to coat.
Heat the cooking oil in a frying pan over a medium heat. Fry the croquettes for 3-4 minutes on each side, or until golden and crispy.
Drain on paper towels to remove excess fat.
Serve immediately, with tartar sauce or hot sauce.
