½ cup fresh or frozen blueberries
1 tablespoon honey or maple syrup
1 teaspoon lemon juice (optional, for a tangy kick)
Step-by-Step Instructions
Step 1: Prepare the Yogurt Base
In a medium bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract.
Mix well until smooth and evenly combined. Taste and adjust sweetness if needed.
Step 2: Make the Blueberry Swirl
In a small saucepan, combine the blueberries, honey (or maple syrup), and lemon juice (if using).
Cook over medium heat, stirring occasionally, until the blueberries break down and the mixture thickens slightly (about 5-7 minutes).
Remove from heat and let the blueberry mixture cool for a few minutes. For a smoother swirl, you can blend it briefly with an immersion blender or mash it with a fork.
Step 3: Assemble the Yogurt Bites
Line a mini muffin tin or silicone mold with paper liners or lightly grease it.
Spoon a small amount of the yogurt base into each mold, filling it about halfway.
Add a teaspoon of the blueberry swirl on top of the yogurt base.
Use a toothpick or skewer to gently swirl the blueberry mixture into the yogurt for a marbled effect.
Repeat until all the molds are filled.
Step 4: Freeze Until Firm
Place the muffin tin or mold in the freezer and let the yogurt bites set for at least 2-3 hours, or until completely firm.
Once frozen, pop the yogurt bites out of the molds and transfer them to an airtight container for storage.
Tips for Perfect Blueberry Swirl Yogurt Bites
Use Full-Fat Greek Yogurt: For a creamier texture, opt for full-fat Greek yogurt.
Customize the Swirl: Experiment with other fruits like strawberries, raspberries, or even a mix of berries for a different flavor profile.
Add Crunch: Sprinkle a few granola bits or chopped nuts on top before freezing for added texture.
Make Them Ahead: These yogurt bites can be made in advance and stored in the freezer for up to 2 weeks, making them a convenient grab-and-go snack.
