Directions

1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. In a large bowl, combine the cake mix, melted butter, and 1 egg. Mix until well combined.
3. Stir in 1 cup of shredded coconut into the cake mixture.
4. Press the mixture evenly into the bottom of the prepared baking dish to form the crust.
5. In another bowl, beat the cream cheese until smooth. Add the remaining 2 eggs and vanilla extract, and mix until well combined.
6. Gradually add the powdered sugar to the cream cheese mixture, beating until smooth and creamy.
7. Pour the cream cheese mixture over the crust in the baking dish, spreading it evenly.
8. Sprinkle the remaining 1/2 cup of shredded coconut over the top.
9. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the center is set but still slightly gooey.
10. Allow the cake to cool completely in the pan before slicing and serving.

For a nutty twist, add 1/2 cup of chopped pecans or walnuts to the crust mixture. You can also experiment with different extracts, such as almond or coconut extract, to enhance the flavor. If you prefer a less sweet version, reduce the powdered sugar to 3 cups. For a more decadent dessert, drizzle melted chocolate over the top before serving.
