Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
In a large bowl, cream together butter, sugar, and cream cheese until light and fluffy.
Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
Gradually add dry ingredients to wet mixture, alternating with buttermilk. Begin and end with dry ingredients, mixing until well combined.
Gently fold in diced strawberries.
Pour batter into prepared loaf pan and smooth top.
Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
Let loaf cool in pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
Variations and Tips
For picky eaters, you can easily substitute blueberries or raspberries for the strawberries, or even mix in some chocolate chips for an extra treat. If you want to add a little crunch, sprinkle some chopped nuts like pecans or walnuts on top before baking. And for those who want a slightly healthier option, you can use whole wheat flour instead of all-purpose flour and reduce the sugar by a quarter cup without sacrificing flavor.
