Kitchen Equipment Needed

  • Mixing bowls
  • Electric mixer or stand mixer
  • Measuring cups and spoons
  • Piping bag with a round tip (or a spoon for dollops)
  • Baking sheet lined with parchment paper
  • Oven

Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
  2. In a clean, dry mixing bowl, add egg whites and cream of tartar.
  3. Using an electric mixer, beat on medium speed until soft peaks form.

Step 2: Whip the Meringue

  1. Gradually add sugar, one tablespoon at a time, while continuing to beat the egg whites.
  2. Increase to high speed and beat until stiff peaks form (this should take about 5-7 minutes).
  3. Mix in vanilla extract and cotton candy flavoring.
  4. If using food coloring, gently fold in a few drops for a swirl effect.

Step 3: Shape and Bake

  1. Transfer the meringue mixture into a piping bag and pipe small cloud-like dollops onto the prepared baking sheet.
  2. Bake for 1.5-2 hours, or until the bites are crisp on the outside but still light inside.
  3. Turn off the oven and let the bites cool inside with the door slightly open.

Step 4: Decorate and Serve

  1. Once cooled, sprinkle with edible glitter, add cotton candy pieces, or dust with pastel sugar.
  2. Serve immediately or store in an airtight container for later enjoyment.
