Instructions:
Prepare the meat mixture:
In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, milk, eggs, Worcestershire sauce, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated.
Shape the loaf:
Shape the beef mixture into a loaf shape. Gently place the loaf in your slow cooker.
Caramelize the onions:
Melt the butter in a skillet over medium heat. Add the sliced onions and cook slowly, stirring occasionally, until caramelized, which takes about 20 to 25 minutes. Once caramelized, pour in the beef stock and continue cooking until most of the liquid is absorbed.
Add the onions to the meatloaf:
Pour the caramelized onions with the broth over the meatloaf in the slow cooker.
Slow cook the meatloaf:
Set the slow cooker to low heat and cook the meatloaf for 6 to 8 hours, or until it reaches your desired doneness.
Melt the cheese:
About 10 minutes before serving, place slices of Swiss cheese on the meatloaf. Cover and let the cheese melt.
