Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the honey, melted butter, and minced garlic.
Toss the carrot sticks in the honey-garlic-butter mixture until they are well-coated.
Spread the carrots in an even layer on a baking sheet lined with parchment paper.
Season with salt and pepper to taste.
Bake in the preheated oven for about 25-30 minutes, or until the carrots are tender and beginning to caramelize.
Remove from the oven and give them a good toss to coat them with any remaining glaze on the baking sheet.
Transfer to a serving dish and garnish with fresh chopped parsley if desired. Serve warm.
Variations & Tips
For picky eaters, you can cut the carrots into smaller pieces or use baby carrots. If you like a bit of tang, add a squeeze of lemon juice before serving. For a spicy kick, sprinkle some red pepper flakes along with the salt and pepper. You can also try using maple syrup in place of honey for a different flavor profile.
