Preparation with the Thermomix:
1. Blend the fruit: Place the strawberries or berries with the sugar and lemon juice in the Thermomix bowl. Blend for 10 seconds / speed 10 to obtain a smooth purée.
2. Whip the mousse: Insert the whisk, add the egg white, then blend for 4 minutes / speed 3.5 until you obtain a light and voluminous mousse.
3. Enjoy: Pour into glasses and refrigerate for at least 1 hour before serving.
