1.5 pounds smoked Polish sausage or kielbasa, sliced
4 cups pasta of choice
2 tablespoons butter
2 tablespoons flour
2.5 cups milk
1 cup sour cream
2 tablespoons Dijon mustard
1 teaspoon garlic powder
1 jar sauerkraut, washed and drained well, 16 ounces
3 cups shredded Swiss cheese, divided
salt and pepper to taste
Instructions:
1. Cook pasta according to package directions until al dente. Drain and set aside.
2. In a large saucepan, melt butter over medium heat. Stir in flour and cook for 1 to 2 minutes until lightly browned.
3. Gradually stir in the milk and simmer, stirring constantly, until the sauce thickens.
4. Remove the pan from the heat and stir in the sour cream, Dijon mustard, and garlic powder until well blended.
5. Preheat the oven to 375°F (190°C).
6. In a 9 x 13-inch baking dish, layer half of the cooked pasta, sauerkraut, Polish sausage, and half of the shredded Swiss cheese.
7. Pour half of the sauce over the layers and spread evenly.
8. Repeat the layers with the remaining ingredients: pasta, sauerkraut, Polish sausage, cheese, and sauce.
9. Bake the casserole in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
10. Let cool for a few minutes before serving. Enjoy your delicious Polish pasta casserole!
