Instructions:
1. Prepare the Pork:
Preheat the oven to 375°F (190°C).
Pat the pork loin dry with paper towels. Rub it all over with olive oil, then season evenly with salt, black pepper, garlic powder, onion powder, and dried thyme.
Place the seasoned pork loin in a roasting pan.
2. Make the Glaze:
In a small saucepan over medium heat, combine the cranberry sauce, honey (or maple syrup), balsamic vinegar, minced garlic, Dijon mustard, and cinnamon (if using).
Simmer for 5 minutes, stirring occasionally, until the glaze thickens slightly. Remove from heat.
3. Roast the Pork:
Brush a generous amount of the glaze over the pork loin.
Roast uncovered in the preheated oven for 50–60 minutes, basting the pork with more glaze every 15–20 minutes.
During the last 20 minutes of cooking, scatter the dried cranberries and pearl onions around the pork in the roasting pan.
4. Check Doneness:
Use a meat thermometer to check the internal temperature of the pork. It should reach 145°F (63°C) for medium doneness.
Once done, remove the pork from the oven and let it rest for 10 minutes before slicing.
5. Serve and Garnish:
Slice the pork loin and arrange it on a serving platter. Spoon the cranberry glaze, dried cranberries, and pearl onions over the top.
Garnish with fresh thyme sprigs for a touch of elegance.
