Preheat oven to 450°F (230°C). Lightly grease a baking dish with olive oil.
-
Arrange onion slices in a single layer. Drizzle with olive oil, then sprinkle with thyme, salt, and pepper.
-
Roast for 20 minutes, or until the onions begin to soften and caramelize at the edges.
2. Make the Cream Sauce
-
In a small saucepan, warm the heavy cream over medium heat until it just begins to simmer.
-
Whisk in the Dijon mustard and ¼ cup of Asiago cheese until melted and smooth.
3. Assemble & Bake
-
Remove onions from the oven and pour the cream sauce evenly over them.
-
Sprinkle the remaining ¼ cup of Asiago cheese on top.
-
Cover with foil and bake for 20 more minutes, or until bubbly and golden.
4. Serve & Enjoy
-
Let rest for 5 minutes before serving. Garnish with extra thyme if desired.
-
Pairs beautifully with roasted meats, grilled chicken, or crusty bread.
Tip: For extra richness, broil for 1–2 minutes at the end for a crispy cheese topping!
