Directions:
- Preheat & Prep: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Dry Ingredients: In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Cream Butter & Sugars: In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
- Wet Ingredients: Mix in egg, vanilla extract, and red food coloring until fully combined.
- Combine: Gradually add the dry ingredients to the wet mixture, mixing just until incorporated (do not overmix).
- Make Filling: In a separate bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Assemble Cookies:
- Scoop 1 tbsp of cookie dough and flatten slightly in your palm.
- Place ½ tsp of cream cheese filling in the center.
- Fold dough over the filling and roll into a ball, sealing completely.
- Bake: Place dough balls 2 inches apart on the baking sheet. Bake for 10–12 minutes until edges are set but centers are soft.
- Cool: Let cookies rest on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
