Directions:

  1. Preheat & Prep: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Dry Ingredients: In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. Cream Butter & Sugars: In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  4. Wet Ingredients: Mix in egg, vanilla extract, and red food coloring until fully combined.
  5. Combine: Gradually add the dry ingredients to the wet mixture, mixing just until incorporated (do not overmix).
  6. Make Filling: In a separate bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  7. Assemble Cookies:
    • Scoop 1 tbsp of cookie dough and flatten slightly in your palm.
    • Place ½ tsp of cream cheese filling in the center.
    • Fold dough over the filling and roll into a ball, sealing completely.
  8. Bake: Place dough balls 2 inches apart on the baking sheet. Bake for 10–12 minutes until edges are set but centers are soft.
  9. Cool: Let cookies rest on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
