Instructions:

  1. Sauté Aromatics & Ham: Heat olive oil in a soup pot. Cook onion, celery, carrot, and ham until softened and slightly browned (about 10 minutes). Season with salt & pepper.
  2. Build the Flavor: Stir in garlic and Italian seasoning.
  3. Add Peas & Liquid: Pour in split peas, chicken stock, water, and parsley. Stir well.

  5. Shred the Ham (if using a bone) Remove the ham bone, shred the meat, and return it to the soup. Continue simmering.
  6. Adjust & Serve: Add water as needed for desired consistency. Taste & season. Serve warm!
