Instructions:
- Season the Chicken:
- In a bowl, mix the lemon zest, dried oregano, garlic powder, salt, and black pepper.
- Rub the seasoning mixture evenly over both sides of the chicken breasts.
- Sear the Chicken:
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken and cook for 5–6 minutes per side, until golden brown. Remove from the skillet and set aside.
- Deglaze & Simmer:
- Pour the chicken broth into the skillet, scraping up any browned bits.
- Stir in the lemon juice, artichoke hearts, olives, and capers (if using).
- Finish Cooking:
- Return the chicken to the skillet, spooning the sauce over the top.
- Reduce heat to medium-low, cover, and simmer for 8–10 minutes, or until the chicken is cooked through (internal temperature of 165°F).
- Garnish & Serve:
- Sprinkle with fresh parsley before serving.
- Serve warm with couscous, rice, or crusty bread to soak up the delicious sauce.
