Instructions:

  1. Season the Chicken:
    • In a bowl, mix the lemon zest, dried oregano, garlic powder, salt, and black pepper.
    • Rub the seasoning mixture evenly over both sides of the chicken breasts.
  2. Sear the Chicken:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the chicken and cook for 5–6 minutes per side, until golden brown. Remove from the skillet and set aside.
  3. Deglaze & Simmer:
    • Pour the chicken broth into the skillet, scraping up any browned bits.
    • Stir in the lemon juice, artichoke hearts, olives, and capers (if using).
  4. Finish Cooking:
    • Return the chicken to the skillet, spooning the sauce over the top.
    • Reduce heat to medium-low, cover, and simmer for 8–10 minutes, or until the chicken is cooked through (internal temperature of 165°F).
  5. Garnish & Serve:
    • Sprinkle with fresh parsley before serving.
