Instructions:

  1. Sauté Aromatics: Heat sesame oil in a large pot over medium heat. Add garlic and ginger, stirring for 30–60 seconds until fragrant.
  2. Simmer Broth: Pour in broth and bring to a gentle simmer.
  3. Add Potstickers & Veggies: Carefully add potstickers, mushrooms, and bok choy stems. Simmer for 5 minutes.
  4. Finish & Season: Stir in bok choy leaves, soy sauce, and rice vinegar. Simmer 5–7 more minutes until potstickers are cooked through. Taste and adjust with salt, pepper, or extra soy sauce.
  5. Serve: Ladle into bowls and garnish with green onions.

Tips:

  • For extra depth, add a dash of chili oil or a sprinkle of sesame seeds.
  • Swap potstickers for wontons or tofu for variation.
  • Bok choy stems can be added earlier for crunch, leaves later for brightness.
