Step 3: Cook the Rhubarb Filling

Mix cornstarch + water into a slurry, stir into rhubarb, and cook 2–3 more minutes until thickened. Let cool slightly.
Step 4: Prepare the Custard

Whisk together eggs, sugar, flour, and vanilla until smooth.
Step 5: Assemble & Bake

Spread rhubarb filling over the crust.

Pour custard mixture evenly on top.

Bake 30–35 minutes until custard is set and golden.

Cool completely, then refrigerate 2+ hours (or overnight) to firm up.
Step 6: Slice & Serve

Lift bars from the pan using parchment. Cut into squares and enjoy!
