Instructions

Step 1: Prep & Preheat

  • Preheat oven to 350°F (175°C).

  • Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal. Lightly grease the paper.

Step 2: Make the Crust

  1. In a bowl, mix flour, butter, sugar, and salt until crumbly.

  2. Press evenly into the pan.

  3. Bake for 15–18 minutes until lightly golden. Let cool slightly.

Step 3: Cook the Rhubarb Filling

  1. In a saucepan, combine rhubarb, sugar, and water. Simmer over medium heat for 8–10 minutes until soft.

  2. Mix cornstarch + water into a slurry, stir into rhubarb, and cook 2–3 more minutes until thickened. Let cool slightly.

Step 4: Prepare the Custard

  • Whisk together eggs, sugar, flour, and vanilla until smooth.

Step 5: Assemble & Bake

  1. Spread rhubarb filling over the crust.

  2. Pour custard mixture evenly on top.

  3. Bake 30–35 minutes until custard is set and golden.

  4. Cool completely, then refrigerate 2+ hours (or overnight) to firm up.

Step 6: Slice & Serve

  • Lift bars from the pan using parchment. Cut into squares and enjoy!
