Ingredients:
For the Ribeye Steak:
- 2 ribeye steaks (1 to 1.5 inches thick, about 12 oz each)
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 3 garlic cloves, smashed
- 2 sprigs fresh rosemary or thyme
- Kosher salt & freshly ground black pepper
For the Caramelized Onions:
- 2 large yellow onions, thinly sliced
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1 tsp brown sugar (optional, enhances caramelization)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp balsamic vinegar (optional, for depth)
For the Mashed Potatoes:
- 1.5 lbs Yukon Gold or Russet potatoes, peeled & cubed
- 1/2 cup whole milk or heavy cream, warmed
- 4 tbsp unsalted butter
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- 1/4 cup sour cream (optional, for extra creaminess)
