Ingredients:

For the Ribeye Steak:

  • 2 ribeye steaks (1 to 1.5 inches thick, about 12 oz each)
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 garlic cloves, smashed
  • 2 sprigs fresh rosemary or thyme
  • Kosher salt & freshly ground black pepper

For the Caramelized Onions:

 

 

  • 2 large yellow onions, thinly sliced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp brown sugar (optional, enhances caramelization)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp balsamic vinegar (optional, for depth)

For the Mashed Potatoes:

  • 1.5 lbs Yukon Gold or Russet potatoes, peeled & cubed
  • 1/2 cup whole milk or heavy cream, warmed
  • 4 tbsp unsalted butter
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/4 cup sour cream (optional, for extra creaminess)
