Roasted Carrots, Potatoes & Onions

Instructions:

  1. Preheat oven to 475°F (245°C).

  2. Prep vegetables: Cut carrots and potatoes into even-sized chunks. Slice onion into eighths and mince garlic.

  3. Season: In a large bowl, toss carrots, potatoes, and onions with olive oil, garlic, thyme, parsley, salt, and pepper until evenly coated.

  4. Roast covered: Spread vegetables in a single layer on a baking sheet. Cover with foil and roast for 45 minutes.

  5. Finish roasting: Remove foil, stir vegetables, and continue roasting uncovered for 30 minutes, stirring every 10 minutes, until golden and tender.

  6. Serve hot and enjoy!
