Instructions

1. Brown the Sausage

  • In a large skillet over medium heat, cook the ground Italian sausage until browned, breaking it into small pieces as it cooks.

  • Once fully cooked, drain excess grease and transfer the sausage to the slow cooker.

2. Add Vegetables & Seasonings

  • To the slow cooker, add the chopped carrots, celery, onion, bell pepper, and zucchini.

  • Pour in the diced tomatoes (with juices), cannellini beans, and broth.

  • Sprinkle in the garlic powder, Italian seasoning, red pepper flakes, salt, and black pepper. Stir well to combine.

3. Cook on Low or High

  • Low & Slow Option: Cover and cook on LOW for 6-7 hours for deeper flavor.

  • Quick Cook Option: Cover and cook on HIGH for 3-4 hours if short on time.

4. Adjust Seasoning & Serve

  • Before serving, taste and adjust salt, pepper, or red pepper flakes if needed.

  • Ladle the soup into bowls and top with shredded parmesan cheese.
