Baked Pancakes with Vanilla Sauce

Directions

  1. Preheat & Prep: Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish and set aside.

  2. Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

  3. Combine Wet Ingredients: In another bowl, mix buttermilk, egg, melted butter, and vanilla extract.

  4. Make Batter: Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix).

  5. Bake: Spread the batter evenly in the prepared dish. Bake for 20–25 minutes, or until golden and a toothpick inserted in the center comes out clean.

  6. Prepare Vanilla Sauce: While the pancakes bake, combine milk, sugar, and cornstarch in a small saucepan. Cook over medium heat, stirring constantly, until thickened and bubbling. Remove from heat and stir in butter and vanilla extract.

  7. Serve: Let pancakes cool slightly, then cut into squares. Drizzle with warm vanilla sauce and enjoy!
