Instructions:
- Preheat the grill or oven to 400°F (200°C). If using a grill, set it to medium-high heat.
- Prepare the foil packets:
- Tear off 4 large sheets of heavy-duty aluminum foil (about 12×18 inches each). Lightly spray or brush with oil to prevent sticking.
- Mix the ingredients:
- In a large bowl, combine the shrimp, sausage, bell peppers, red onion, garlic, and corn pieces.
- Drizzle with olive oil and sprinkle with smoked paprika, oregano, garlic powder, onion powder, salt, and black pepper. Toss well to coat evenly.
- Assemble the foil packets:
- Divide the mixture evenly among the 4 foil sheets.
- Fold the foil over the mixture and tightly seal the edges by crimping or rolling to create a secure packet.
- Cook the packets:
- Grill method: Place the packets on the preheated grill and cook for 12-15 minutes, flipping once halfway through, until shrimp are pink and cooked through.
- Oven method: Place the packets on a baking sheet and bake for 18-20 minutes until shrimp are opaque and vegetables are tender.
- Serve:
- Carefully open the packets (watch for steam) and garnish with fresh parsley and a squeeze of lemon if desired.
- Serve directly from the foil or transfer to plates. Enjoy with crusty bread or over rice!
Tip: For extra flavor, add a pat of butter or a splash of hot sauce before sealing the packets.
