Step 1: Preheat and Prep
Preheat your oven to 350°F (175°C).
Grease a 9-inch round or square baking pan and line it with parchment paper.
Step 2: Make the Cake Batter
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In a large mixing bowl, cream the softened butter and sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Alternate adding the dry ingredients and sour cream to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
Fold in the diced apples.
Step 3: Bake the Cake
Pour the batter into the prepared pan and spread it evenly.
In a small bowl, mix the sugar and cinnamon for the topping. Sprinkle it evenly over the batter.
Drizzle the melted butter over the top.
Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Step 4: Cool and Serve
Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
