Step 1: Preparing the Roast
Start by preheating your oven to 325°F (165°C). Place the beef chuck roast on a cutting board and pat it dry with paper towels. This will help the seasonings adhere better to the meat.
In a small bowl, mix together the minced garlic, olive oil, salt, black pepper, dried rosemary, and dried thyme. Rub this mixture all over the roast, making sure to coat it evenly.
Step 2: Roasting the Beef
Place the seasoned roast on a rack in a roasting pan. This will allow the heat to circulate evenly around the meat and help it cook more evenly. Pour the beef broth into the bottom of the roasting pan to keep the meat moist during cooking.
Insert a meat thermometer into the thickest part of the roast, making sure it doesn’t touch the bone if there is one. Place the roasting pan in the preheated oven and roast the beef for about 2 to 2 ½ hours, or until the internal temperature reaches 135°F (57°C) for medium-rare. Adjust the cooking time depending on your desired level of doneness.
Step 3: Resting and Serving
Once the roast reaches the desired temperature, remove it from the oven and transfer it to a cutting board. Cover it loosely with aluminum foil and let it rest for about 15-20 minutes. This resting period allows the juices to redistribute, resulting in a more tender and flavorful roast.
