Step 1: Preheat and Prep
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
Step 2: Mix the Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Step 3: Cream the Butter and Sugar
In a large mixing bowl, beat the softened butter and sugar until light and fluffy (about 3-4 minutes). Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Step 4: Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined. Be careful not to overmix.
Step 5: Bake the Cake
Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Step 6: Make the Frosting (Optional)
In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, heavy cream, and vanilla extract. Beat until smooth and fluffy. Add food coloring if desired.
Step 7: Assemble and Decorate
Place one cake layer on a serving plate and spread a layer of frosting on top. Add the second layer and frost the top and sides of the cake. Decorate with sprinkles, fresh fruit, or other toppings.
