I first tasted this delightful dessert during my stay in Lancaster, and it instantly became one of my favorites. The rich, molasses flavor combined with a buttery crumb topping creates a comforting and satisfying treat. After that memorable experience, I was determined to recreate this iconic pie at home. So, if you’re in the mood for something uniquely flavorful, this Lancaster-style Shoofly Pie is just the thing!
Ingredients:
For the Crust:
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup unsalted butter, cold and cut into small cubes
2-3 tablespoons ice water
For the Filling:
1 1/2 cups dark molasses
1 cup hot water
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg, beaten
1 teaspoon vanilla extract
For the Crumb Topping:
1 cup all-purpose flour
1/2 cup packed brown sugar
1/4 cup unsalted butter, softened
1/4 teaspoon ground cinnamon
Pinch of salt
