Ingredients :
2 rolls of shortcrust pastry
500 g of various mushrooms (porcini mushrooms, chanterelles, button mushrooms)
150 g of smoked brisket
2 finely chopped shallots
1 sprig of fresh thyme
3 tbsp. tablespoon of crème fraîche
1 egg yolk for gilding
Salt, pepper
Fresh parsley for serving
