Ingredients
- 1 lb (about 450g) ripe kiwi fruit
- 2-3 tablespoons honey (adjust to taste)
- Juice of 1 lemon
- Water (if needed)
Instructions
1. Prepare the Kiwi:
- Peel the kiwi fruit and chop them into small pieces.
2. Cook the Kiwi:
- In a medium saucepan, add the chopped kiwi fruit and lemon juice.
- Cook over medium heat, stirring occasionally, until the kiwi fruit softens and breaks down, about 10-15 minutes.
3. Mash or Blend:
- Use a potato masher or immersion blender to mash the kiwi to your desired consistency. You can leave it chunky or blend until smooth, depending on your preference.
4. Sweeten:
- Stir in honey, starting with 2 tablespoons. Taste and add more honey if you prefer a sweeter jam. If the kiwi mixture is too thick, you can add a little water to reach your desired consistency.
