Crispy, tasty and very light oven chips: here’s the trick

Ingredients for crispy chips: 500 grams of yellow-fleshed potatoes, 1 teaspoon of extra virgin olive oil and a pinch of salt.

Clean the potatoes thoroughly, peel them, and cut them into slices about 5 millimeters thick. Soak them in cold water for a few minutes (10-15), then drain them and place them in a saucepan filled with cold water and a pinch of salt.

These steps will remove some of the starch from the potatoes, but also soften them before baking.
