3.2 Activating the Yeast
Dissolving the yeast:
If using fresh yeast, dissolve it in a little warm water. If using dried yeast, you can add it directly to the flour.
3.3 Preparing the Dough
Mix the dry ingredients:
In a large bowl, sift the flour and add the salt and sugar (if using). Mix well.
Adding the wet ingredients:
Make a well in the center of the flour and pour in the water and dissolved yeast. Start mixing with a wooden spoon or the planetary mixer at low speed.

Incorporating the butter:
Add the softened butter little by little and continue kneading until the dough is smooth and elastic. If kneading by hand, knead for about 10-15 minutes. If using the planetary mixer, knead at medium speed for about 8-10 minutes.
