Prepare the meat:
In a large skillet or Dutch oven, heat a little oil over medium-high heat.
Brown the beef ribs until golden brown on all sides.
Remove the meat and set aside.
Prepare the sauce:
In the same pan, add a little oil if necessary and fry the onions until they become translucent.
Add the garlic, tomatoes and pepper, then simmer for 5 minutes.
Add the tomato paste and mix well.
Season and simmer:
Add the paprika, sweet pepper, cumin, thyme and bay leaf.
