  • 2 lbs carrots, peeled and cut into chunks

  • 6 medium potatoes, cut into chunks (skin on)

  • 1 large sweet onion, cut into eighths

  • 3 cloves garlic, minced

  • 6 tbsp olive oil

  • ½ tsp dried thyme

  • ½ tsp dried parsley

  • Salt and black pepper, to taste
